Chicken Yakhni Pulao: A great recipe for the soul

Some days just call for Chicken Yakhni Pulao. Warm and delicious, it’s great for the soul on cold fall days and goes perfect with some raita and kebab.

My sister gave me an amazing book, “Heirloom Recipes from Pakistan”, compiled by the Pakistan Women’s Association of the Philippines, Inc. The proceeds from the sale of this book go to charity work supported by the association. Love the experience behind the recipes and they always turn out great!

I tried the recipe for the chicken yakhni pulao as below from the book:

Chicken Yakhni Pulao

I struggle a bit in deciding liquid quantity for a pulao and that’s why usually make biryani when I’m expecting a lot of guests. This recipe however has the perfect formula and it always turns great. If you end up with some extra yakhni, you can use it to help fight or prevent cold in the house.

Make some raita and fresh salad to go with the pulao. Kachoomar recipe (chopped tomatoes + onions with a sprinkle of lemon and salt) traditionally goes great with chicken yakhni pulao and is very refreshing.

This recipe is quite mild in taste, so it’s perfect for children also. Make sure they eat lots of chicken also to get their protein intake and the rice the enriched with the yakhni for extra strength!

  2. Am an absolute Pullao fan and may Nano jaan used to make an amazing gosht pullao and after her it’s my mother’s that i love the best. I do make as well but am not consistent, at times I make it well and اور others i just screw it up. Let’s hope using this recipe i will be able to avoid that too.
