Tandoori Chicken

 
My daughter’s preschool here in Calgary had a family potluck dinner yesterday. I wanted to take a dish that represented our unique cultural identity as Pakistani-Canadians and would be fairly fimiliar to all parents. 

Found a great recipe on one of my favorite food blogs My Halal Kitchen for Tandoori Chicken. This was a very simple to follow recipe and the results were amazing! I did not have smoked paprika, cayenne pepper or ground annatto seed and used red chilli powder instead. It still turned out great! I was happy to use many of my home-made spices like Garam Masala, Ground Cumin and Coriander

Butter is critical to get that creamy texture. Also I broiled the chicken in the end, according to the instructions to get that charred effect. 

As I picked my daughter from school today, two teachers from other classrooms approached me to say how they loved the dish. I always love it when people appreciate Southasian dishes. Food and spices are an integral part of our cultural identity and I love presenting a softer image of Pakistan to the world, one potluck at a time!
